Transport yourself to the tropics in just a few minutes with this cocktail (or mocktial) full of island flavors. Coconut, pineapple, rum and walnuts blend together seamlessly for your new poolside beverage.
8 oz pineapple juice
6 oz walnut milk
4 oz white rum
1/2 oz lime juice
5 tablespoons coconut cream
1 1/2 tbsp sugar
Toasted California walnuts, fresh mint and pineapple slices (optional toppings)
Pour walnut milk and pineapple juice into ice cube trays and freeze until firm.
Transfer to a blender with remaining ingredients and blend until smooth.
Pour into frozen daiquiri, hurricane or highball glass. Garnish with walnuts, mint and pineapple, if desired.
