Walnut meat and barbecue sauce on Hawaiian rolls make a quick, tasty filling in these sliders.
2 cups California walnuts
1/2 cup yellow onion, chopped
1/2 cup cauliflower, chopped
1/2 cup carrots, shredded
1/4 cup olive oil
2 tablespoons white wine vinegar
1-1/2 tablespoon paprika
1-1/2 teaspoon dried thyme
1 teaspoon dried marjoram
3/4 teaspoon sea salt
1/2 teaspoon black pepper
4 cloves garlic, minced
1 cup Cannellini beans, rinsed and drained
1/4 cup plant-based walnut meat
1 tablespoon barbecue sauce
1 small leaf green leaf lettuce, halved
2 medium tomato slices
1 small very thin slice red onion, halved
2 Hawaiian sweet rolls, halved horizontally
2 Tablespoons low-sodium shredded cheddar cheese
Place all ingredients for the plant-based walnut meat in a food processor. Pulse to chop all ingredients. The consistency should resemble cooked, ground beef.
Stir together plant-based walnut meat and barbecue sauce in a small bowl. Microwave walnut and barbecue mixture on HIGH for 30 seconds, or heat in a skillet over medium heat until warm.
Place lettuce, tomato and onion on roll bottoms. Top with hot walnut mixture and shredded cheese. Close sandwiches and serve.
