Ingredients

  • 1/2 cup cooked beetroot
  • 2/3 cup frozen mixed berries
  • 2 tablespoons oats
  • 1 teaspoon freshly grated ginger
  • 1-2/3 cup homemade California walnut milk
  • 1/3 cup fresh blueberries
  • 1/2 cup California walnuts
  • 2 sprigs fresh mint leaves

Preparation

  1. Place the beetroot, frozen berries, oats and ginger into a blender. Pulse until nearly smooth.
  2. Add walnut milk to the blender and blend until smooth.
  3. Pour the smoothie into 2 bowls and arrange the fresh blueberries, walnuts and mint leaves on top in an attractive pattern to serve.
