1 pound California walnuts
1 teaspoon salt
4 teaspoons walnut or olive oil
In a blender or food processor, grind the walnuts and salt for 3-4 minutes until the mixture becomes sticky or paste-like.
Add the oil, a little bit at a time until the walnut butter binds together (about 5-10 minutes).
Spoon the butter into a container with a lid, seal, and store until ready to use.
Option: To make Caramelized Walnut Butter, start by drizzling 3 teaspoons of honey or maple syrup over the walnuts. Sprinkle a pinch of salt on them and toast the walnuts in a preheated oven for 15 minutes at 350℉. Let cool and blend in a mixer as described in the basic recipe.
Tip: If you prefer your walnut butter sweeter, add two to three tablespoons of honey or maple syrup as you blend.
