A refreshing summer salad that comes together quickly. Let marinate for up to an hour to really get the most out of the flavor.
6 cups 3/4-inch cubes seedless watermelon
3/4 cup California walnuts, coarsely chopped
1/2 cup crumbled feta cheese
3 tablespoons snipped fresh basil
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
Salt and pepper to taste
Place watermelon, walnuts, cheese and basil in a large bowl.
Whisk together oil, lemon juice and vinegar in a small bowl and season with salt and pepper.
Drizzle over watermelon mixture and stir to coat with dressing. Let marinate for up to 1 hour.
