Before you begin, here are the ingredients you’ll need to gather:
Homemade Green Goddess Dressing
- 1/4 cup fresh basil leaves, lightly packed
- 1/4 cup fresh Italian parsley leaves, lightly packed
- 1/4 cup fresh chives, roughly chopped
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon lemon zest, finely grated
- 1/4 teaspoon salt
- Freshly ground pepper to taste
Pinwheels
- 1/2 cup California walnuts, chopped
- 1/3 cup green apple, finely chopped
- 2 (5-oz.) cans tuna (packed in water), drained and flaked
- 1 small shallot, finely chopped
- 1 stalk celery, finely chopped
- 4 (12-inch) spinach or spinach herb tortillas
- 4 cups mixed greens
Step 1: Prepare the green goddess dressing
This homemade green goddess dressing is packed full of fresh herbs and loads of flavor, making it perfect for springtime, or really just about any time of year. To begin, puree all the ingredients in a small blender or food processor and then transfer half the mixture (setting aside the other half for later) to a large bowl.
Step 2: Add more flavor and crunch
After you’ve chopped the walnuts (pro tip: toast your walnuts before chopping for extra flavor), apples, shallot and celery, add these ingredients into the bowl and stir to combine.
Step 3: Warm the tortillas
Warm the tortillas in a skillet over medium-low heat long enough to make them soft and pliable (about 30 seconds).
Step 4: Make the pinwheels
Once the tortillas have cooled slightly, spread a thin layer of the remaining green goddess dressing mixture onto each of the tortillas. Then divide the mixed greens and tuna salad onto each of the tortillas and roll each tightly to close. Slice each roll into 5 or 6 pinwheels and use toothpicks to secure if necessary. These may also be prepared a day ahead of time, stored tightly wrapped in the refrigerator until ready to serve, and then cut right before serving.
And in no time at all, you’ve created a simple and delicious meal or snack
