Ingredients
- 2 ½ cups of California walnuts, divided
- 1 cup of water
- 3 tablespoons of powdered sugar
- 1 to 2 teaspoons of honey, divided
- 1 teaspoon of vanilla extract
- 1 teaspoon of peppermint extract
- A pinch of salt
How to Make
Step 1: Purée 2 cups of walnuts and water in a blender for 2 minutes or until the mixture is light and fluffy.
Step 2: Add the powdered sugar, 1 teaspoon of honey, vanilla, peppermint extract, and salt. Blend for 30 seconds. Taste the mixture. If you want a sweeter taste, add the remaining teaspoon of honey.
Step 3: To make the cream thicker, add the remaining ½ cup of walnuts and purée the mixture until it’s light and fluffy.
Store the whipped cream in an airtight container and place it in the refrigerator until you’re ready to use it. You can prepare the cream up to two days ahead of time.
