Can you name a job that requires you to work 24 hours a day, 7 days a week, for no pay and no days off? It’s one of the hardest jobs out there. That’s why we have one special day a year dedicated to celebrating these people. You guessed it. Mother’s Day! In this video, our Pint Size Chef, Pia, shows her favorite way to celebrate Mother’s Day. Hint: It includes a little bit of dough and whole lot of love.

On Mother’s Day wake your Mom to the rich aroma of freshly-baked Banana Walnut Donuts with Maple Glaze. The bananas make these donuts soft and moist, while the walnuts add a welcome crunch. Do-nut worry if you aren’t a baking expert. These donuts are so easy to make, an 11-year-old can make them. So grab an apron, roll up your sleeves and get ready to create some Mother’s Day magic in your kitchen! Check out the video below for the full recipe.

Ingredients:

  • 1 1/2 cups all-purpose flour (may substitute 1:1 gluten-free flour)
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/3 cup mashed ripe banana
  • 2 tablespoons coconut oil, melted
  • 1/2 cup buttermilk (or non-dairy milk)
  • 1/2 cup toasted chopped California walnuts

Maple Glaze

  • 1 cup powdered sugar 1 to 2 tablespoons milk (or non-dairy milk)
  • 1 teaspoon maple extract
  • 1/4 cup toasted, finely chopped walnuts for garnish

Preparation

  1. Preheat oven to 350°F. Coat 10 donut pan cups with nonstick baking spray or coconut oil.
  2. In a standing mixer bowl fitted with a whisk attachment, stir together the dry ingredients. Add the banana, coconut oil and buttermilk and beat on medium speed until well combined into a smooth batter. Fold the walnuts into the batter.
  3. Spoon the batter into a large resealable plastic bag. Snip the corner off of the bag and pipe the batter into the donut cups. Bake for 12 minutes until the donuts are just cooked through. Let cool. Then place on a baking rack until completely cool.
  4. In a small bowl, whisk together the maple glaze ingredients until smooth.(Glaze should be fairly thin, but thick enough to stay on the donut.) After spreading on the donuts, immediately sprinkle with walnuts. Serve right away or store in an airtight container.
