Comfort, nostalgia, taste and a yearning for something new are all main drivers in how consumers will choose their confectionery products in 2021. Walnuts and chocolate are a traditional combination, which is great for consumers who want a familiar taste.

A “Top Chocolate Trends for 2021 and Beyond” report from Barry Callebaut, world leader in chocolate and cocoa products, shows that North America is the No. 2 chocolate market in the world, worth over $23 billion. Mordor Intelligence predicts the market is only set for further growth, with an expected 3.5% compound annual growth rate (CAGR) between now and 2025, thanks to increased indulgence in sweets and a drive for premium chocolates.

 

Flavor Pushes Premium Market

Over half of global consumers agreed that chocolates with multiple flavors and textures are more premium, according to Barry Callebaut, and three-fourths said they want to try new and exciting chocolate experiences. More than half also said rare and unique flavors make chocolate more exciting. However, they also want a juxtaposition of nostalgic — the familiar — mixed with new tastes. “Brands emphasizing both classic, nostalgic flavors as well as new and exciting ones will continue to do well, and can only improve their standing by offering ingredients with added benefits — especially those sourced ethically and sustainably,” Food & Beverage Insider reports. With walnuts being recognized as a “hero ingredient” throughout the world, they are the perfect nut to pair with chocolates for great taste and texture along with globally inspired flavors.
Indulgence is a driver, Barry Callebaut notes, and “confectionery can support emotional well-being now and in the ‘next normal.’” Chocolate “has a role to play” in celebrations, escapes and moments of comfort.

 

Plant-Forward Goodness, Traceability

Consumers are looking to plant-based foods, even in sweets, along with guilt-free offerings. Candy Industry reports that consumers demand new formats, new plant proteins and an extra level of sophistication.

“In sweets and snacks, taste has always been a key driver, and plant-based indulgence is powering new product development, combining natural and free-from benefits in established areas such as chocolate, extruded snacks, nuts and snack mixes,” the site shares in its sweets and snacks 2021 trend story.

The Barry Callebaut report agrees: an astounding 83% of global consumers agree that chocolate not only needs to taste great, but it should be “good for me.” And chocolate lovers want to know where their chocolate is being sourced, the report says, as 67% of respondents have an interest in the ingredients list and corresponding supply chain. Vegan ingredients also top consumers’ confectionery wish lists.
