Luckily these mango summer rolls are not complicated to make at all, but it may take a bit of practice for beginners to get the hang of the rolling method. It usually takes even experienced summer roll makers two or three attempts to get the process down, so stick with it! To assemble, start with a rice paper wrap that has been soaking in lukewarm water until it is pliable. Lay it on a flat surface and start by overlapping a few basil leaves in the center of the wrap. Next, place a small handful of cooked vermicelli noodles over the basil, and follow with a few strips each of julienned cucumber, bell pepper and mango. Finish off with a few fresh mint leaves.

Next comes the wrapping. It is usually easiest to gently fold over the side closest to you, then tuck in the side edges and begin to roll until the seam is sealed, similar to wrapping a burrito.

Once you have finished with one, place it seam side down on a plate and repeat the process with the rest! You can cover these with a damp towel to keep them from drying out while you work on the rest.
